This is the spice in Sugar and Spice and this is really Ms. Ying’s passion project. In Taiwan it is seen as a confection with health benefits for the cold winter months, people with stomach cramps and much more. For us, it is these things, but also it is absolutely delicious! This is not your standard candied or crystallised ginger, it is hot, complex and has a deep caramel overtone. We use black sugar molasses, Demerara and asian maltose to create this unique flavour. We admit it does not look delicate, but once you try it you will understand why we love it so much. Be careful, it is spicy so only eat a small piece at a time.
